I can honestly say I’m so glad I learned how to make quick & easy keto fudge. I’ve made quite a few recipes already but this double chocolate keto fudge is my favorite. As a matter of fact I’m upset that I’m out of walnuts because I want to make more and now I have wait for my weekly grocery run.

It’s sugar free, no bake and you only need 5 ingredients to make this sugar free fudge recipe. As a matter of fact if you don’t have any chocolate chips it’s just as good with 4 ingredients. Each piece of keto chocolate fudge has only 1.3g net carbs so I have a couple throughout the day!

Double Chocolate Keto Fudge
Recipe In A Nutshell

  • In a food processor, grind the walnuts until it becomes a thick nut butter.
  • Then add in the cocoa powder, sweetener and butter. Mix into a thick chocolate fudge batter.
  • Line a baking dish with wax paper and spoon the batter into the dish. Smooth over and press in the chocolate chips.
  • Freeze for about 2 hours then take out and cut into pieces. Store in the freezer or refrigerator.
  • Scroll to the bottom for the full recipe card you can print and save for later.

California Walnuts

I was lucky enough to receive a box of delicious California Walnutsand immediately thought to make some keto fudge. They are having a recipe contest (#WalnutsSweetOrSavory)so I decided to enter this recipe because walnuts are the prime ingredient.

I love walnuts for my low carb recipes because:

  • they are low carb
  • but have a good amount of protein (4g/oz) and fiber (2g/oz)
  • they are the only nut to contain an excellent source of plant-based omega-3 ALA (2.5g/oz)
  • walnuts are a versatile snack and can satisfy any taste preference, from savory (think cauliflower rice pilaf) to sweet (freezer fudge)

The 5 Ingredients I Used

Of course I used raw California walnuts as well as Swerve sweetener, Divine cocoa powder, butter and ChocoZero chocolate chips. As I mentioned above this chocolate fudge is just as good without the chocolate chips so if you don’t have them, you can skip them.

Also I use Divine cocoa powder because it has less carbs than regular cocoa powder. Guittard cocoa powder is another good brand but of course you can always use regular cocoa powder.

Let’s make Some Double Chocolate Keto Fudge

First thing to do is add the walnuts to a food processor. This is going to take a few minutes. Below you can see what happens as you process the walnuts. First it gets sticky and crumbly, but the more you process and scrape down the sides, it will eventually look like a thick nut butter. It actually looks like hummus to me.

Then you add in the cocoa powder, sweetener and butter (see bottom left picture above). Now you want to add a piece of wax paper or parchment paper to cover the bottom of your dish but to also hang over the sides (see bottom right picture above).

Spread the fudge batter out and smooth with a spoon. Take the chocolate chips and sprinkle evenly over top and press down into the fudge. Now just place in the freezer for 2 hours and you are done!

How To Store Your Sugar Free Fudge

First of all to cut the fudge, just lift it out with the wax paper and you can cut it into pieces. From there you can store your fudge in a baggie or a sealed container.

I like to keep my fudge in the freezer but you can also store in the refrigerator. I would not keep it out because it could get too soft and mushy.

My father in law is diabetic and loves sweets so this never lasts long in my house. This particular flavor was a favorite for my whole family. Even my son and husband who doesn’t like sweets, enjoyed it.

Easy Double Chocolate Keto Fudge

Easy sugar free double chocolate fudge is a healthy no bake keto snack that only needs 5 ingredients. You can whip this up in minutes!

Ingredients

  • 2 cups raw walnuts
  • 3 tablespoons butter
  • 3 tablespoons Swerve sweetener
  • 2 tablespoons Divine cocoa powder
  • ¼ cup ChocoZero chocolate chips (or other low carb chocolate chips)

Instructions

  1. Add the walnuts to a food processor and process until it's a thick looking nut butter. First it will get crumbly and then look like hummus. You should scrape down the bowl as you go and this should only take a few minutes.
  2. Add in the Swerve sweetener, cocoa powder and butter. Process until well combined.
  3. Place a piece of wax paper or parchment paper in a baking dish so that is covers the bottom and hangs over the sides.
  4. Spoon the fudge batter into the baking dish and smooth the top.
  5. Sprinkle the chocolate chips over the top and press down with your hand.
  6. Freeze for at least 2 hours until it has hardened.
  7. Take out and pull out of the dish with the wax paper sides. Cut into pieces and store in the freezer or refrigerator.

    Does this fudge have that cooling effect that many keto sweets have? I have given up baking keto treats until I can find a way to bake them that don’t have that cooling sensation when I eat them.

      Hi Betsy I don’t believe that it does but it’s been a while since I’ve made it. And I definitely know what you mead about the cooling effect. To me it seems worse with some sweeteners than others. I love Swerve myself and find the brown sugar to be the best. But in this recipe I think because there is a high level of fat that it cuts down on the cooling effect. I’m just guessing though.

    I’m not dark chocolate fan and have been disappointed with similar recipes being too dark. How’s this one really looking for one that’s more milk chocolate than dark.

      Hi Jack, dark chocolate usually contains a higher amount of cocoa and milk chocolate tends to have more milk solids. What you could do it use the ChocZero milk chocolate chips to give this more of a milk chocolate flavor. Aside from that you are getting the chocolate flavor mainly from the cocoa so that might make it too dark chocolate for you. Good luck!

      Hi Cheryl, it does work best with walnut but it should work with either the almonds or pecans. Just keep processing them until they make a nut butter. It may take a few more minutes than the walnuts.
