What is Doner Kebab?
A doner kebab is a popular street food dish from Turkish cuisine that has become famous around the world, especially here in Germany. The kebab is often enjoyed as a quick but tasty meal and can be prepared in the classic meat version as well as in a vegetarian or vegan version. It traditionally consists of thin, grilled slices of meat, usually chicken, veal or lamb. The meat is layered on a vertical skewer, the kebab skewer, and grilled slowly. In the Berlin Original Vöner, a grain and vegetable patty is grilled on the spit instead of meat. For vegetarians, there are also falafel and halloumi in flatbread.
To prepare a kebab, the grilled meat or patty is cut into thin strips and stuffed into a flatbread or pastry pocket together with lettuce, tomatoes, cucumber and onions. Typically, the kebab is also served with various sauces, such as tzatziki, garlic sauce, hot sauce or yoghurt sauce. However, the Dürüm doner kebab, where the filling is wrapped in thin yufka bread, is also popular. In a kebab bowl or kebab box, the kebab meat is served with French fries and salad.

How do you fill a Döner Kebab?
Here are some ideas on how to fill a kebab:
- Classic Doner Kebab: For a classic kebab, you need thin slices of grilled meat such as chicken, veal or lamb. Add ingredients such as lettuce, tomatoes, cucumber, onions and a garlic sauce such as tzatziki. You can also add hot sauce or yoghurt sauce, depending on your preference.
- Vegan Doner Kebab: To make a vegan kebab, you can replace the meat with vegetables or plant-based proteins. For example, you could use marinated and fried tofu strips, or seasoned and grilled mushrooms. Then add lettuce, tomatoes, cucumber, onions and a vegan garlic sauce.
- Vegetarian Doner Kebab: For a vegetarian kebab, you could use grilled cheese or halloumi, which you cut into slices and fry. Combine it with the usual ingredients such as lettuce, tomatoes, cucumber, onions and a sauce of your choice.
Of course, there are many ways to fill a kebab. You can also be creative and add different spices, sauces or additional vegetables to customize the kebab to your taste. The main thing is that you like it!
How can you store a leftovers?
To store a leftover kebab, it is important to store it properly to prevent it from spoiling. Here are a few tips on how to do this:
- Fridge: If you want to store the kebab in the fridge, you should wrap it in an airtight container or cling film to protect it from drying out. Make sure that no sauces or dressings remain on the salad or vegetable pieces, as these could cause them to spoil quickly. The kebab should be kept in the fridge for a maximum of 2-3 days.
- Freezer: If you want to keep the kebab for longer, you can store it in the freezer. To do this, wrap it tightly in cling film or place it in an airtight container. This will prevent frost or freezer burn from penetrating. The frozen kebab can then be stored for up to 3 months. To enjoy it, you should allow it to defrost slowly, ideally in the fridge overnight.
It is important to note that the quality of the kebab may not be as good as freshly prepared after defrosting.
