Watermelon Salsa
A wonderfully refreshing snack for summer! Note that if you like a spicier watermelon salsa, you can finely mince some jalapeño and mix that in too! And lastly, if you prefer cilantro, that goes super well with watermelon too. Simply replace the basil with the same amount of cilantro.

Cristina – That’s wonderful!!! The funny part is, Mini Chef wouldn’t eat it. I think he was JUST expecting the watermelon flavor. The basil threw him off. But that’s okay, because everybody else devoured it.
Glad you all enjoyed it! 🙂

Mint is what I’ve always put with watermelon. I love it, its so cool and refreshing, but my hubby isn’t a fan of mint, so I should try it with the basil for him. Thanks for the idea!

Christy – I thought about mint too. We have a chocolate mint plant in the back yard though. No regular mint. It just didn’t go well somehow. I love the basil though. Not sure I’d want it with mint after trying it with the basil. So yummy!

That sounds like a great combo – especially with the lime too!

Sherretteestes – Corn chips are best. Just be sure the pineapple is sweet. Might be hard to find this time of year. I have a strawberry salsa you might like too. It’s a little easier to find good strawberries this time of year than watermelon.

sherretteestes – Haha! I guess you’ll just have to try them all!
